For July, our guest chef is David Toutain - his signature starter kicks off our new menu! It’s a modern take on every French kid’s summer comfort food: a salmon ballotine with diced mixed veggies in a basil mayonnaise. To mark the occasion, David Toutain flew with La Compagnie on July 31st and presented his signature dish to our lucky passengers.
